Tunisian Grated Carrot Salad

4-6 carrots peeled, trimmed and grated (or 8 oz. package of grated/shredded carrots)
2 Tbsps chopped parsley

Dressing:
1 clove garlic, finely minced
½ tsp harissa* or hot pepper sauce
4 tbsp water
1 tsp caraway seeds
½ tsp salt
1/8 cup wine vinegar

 Mix dressing and toss with grated carrot with parsley. Serve as a side dish to the couscous.
