check for water in fuel tank, or a clogged tank vent.
remove the fuel line and pump some gas into a can and see if there are any water bubbles in the bottom.  [water is heaver than gas so it will look like bubbles on the bottom of the bucket] If there is a little water in the tank it might not pick it up until the boat starts bouncing on the waves or tilts to get on a plane.  then the water gets sucked into the fuel line.  If you have an inspection plate remove it and look in the tank for water.  Also look for something clogging the pickup tube in the tank and a clogged vent that lets air into the tank as the fuel goes out.  The fuel vent is usually on the side of the boat high up somewhere.  If you can't find it just disconnect the vent line from the tank and blow air through it to see if it is clear.  [I have seen bugs clog them]

good luck

It may be as simple as burning high test vs regular. I made that mistake once, motor ran like crap, then put in some octane booster, then next time, filled tank with high test. Not only did the problem go away, never had an issue again.
