I'm not sure what your cabin / cockpit looks like.
I have seen several people cut a hole in the wall and mount a home unit in there.
I also have heard of people dissasembling a home unit, mounting the control panel, encasing the coils in plexi-glass, and plumbing it to a through-hull. Some guy did this and went into great detail about it on the Baylinerownersclub.net forum (I think that's what it's called). He mounted the coils under the B-Berth.
If I was going to do it, I would probably go with a slightly larger unit, say 7500 BTU's or something.
I had one of those portable units that fit into the V-Berth hatch that worked pretty well, but it leaked if it rained really hard, and was a PITA to take down and put up.
