This is a great way to use the remnants of a fresh whole pineapple after you’ve eaten the fruit. 8 cups water 1 fresh pineapple 3 quarter-sized slices of fresh ginger Sugar (optional) Scrub pineapple skin, then trim pineapple and put fruit aside for another use. Place ONLY skin and core in a large jar with water and sliced ginger. Cover and refrigerate or keep in cool place overnight. Strain and serve over ice with fresh pineapple slice as garnish on the glass. |
