2 medium cucumbers, halved lengthwise, seeded and thinly sliced
2 tsps salt
4 tsps sugar
2 tsps rice or cider vinegar
1 tsp chili oil, 1 fresh red or green chile seeded and thinly sliced or 1/8 tsp crushed red pepper
½ tsp sesame oil
Combine, sugar, salt, vinegar in a medium bowl. Whisk until sugar dissolves. Add cucumber, sesame oil and (or chili oil). Toss until evenly coated. Let sit for 15 minutes. Garnish with peanuts and serve.
