This recipe is broken down into individual servings. Multiply by number of persons you are feeding.
1 large potato (baked)
1 or 2 green onions, chipped
sour cream (3-4 tbsp)
1/4 cup Longhorn cheddar cheese, shredded
butter/margarine, 1 or 2 tbsp
salt and pepper to taste
Scoop meat out of the cooked potatoes, leaving skin intact. Mash potato meat with fork adding sour cream, butter, and salt and pepper until creamy. Add green onions, shredded cheese, and mix together and put back in skins. Reheat in microwave.
