Dressing for Vegetables

¼ cup olive oil
1 tbsp red wine vinegar or lemon juice
1 tbsp Dijon mustard (e.g. Grey Poupon), optional
1 large clove of garlic minced or pressed
Salt, pepper to taste
 
Mix vinegar, mustard and garlic, pour into sliced or grated vegetables. Add salt and pepper to taste.
