I have a 2006 Monticello. In the trunk of the boat where the battery
switch is located is also a grey toggle switch that appears to have no
purpose or so I thought. Today it got accidentally switched in the up
position and the engine battery was somehow disconnected. As such,
the boat would not start. The house battery continued to function fine.
Returning the toggle to its original position and the boat started up. The
main battery switch was in the on position in all cases. Any idea of the
switch's purpose?

Looks like you have found the reason for the switch. It may simply be a way to disable the starting of the engines.

Just got back from the lake and had the engine die just as I was
docking. The engine cut out when I move the shift from forward to
reverse. The engine would not restart nor would the drive lift up, almost
seemed like a dead battery. But when I fiddled with the mystery switch
and the isolator battery switch, the engine started. This time the
mystery switch was in the same position as when I left the dock this
morning. Any ideas for a solution?

I can only speculate. My 310 came with a owners manual that includes an electrical schematic. I suggest that you take the time to study it. The switch may also be going bad if fiddling with it alowed you to regain power to the engine.
