we have a 1999 270DA, SecondBestToy.  WE use it as a weekender, and often do whole weeks on it in Charleston, The Keys or other locations along the Atlantic ICW.  Some places we trailer to some we motor.  We are not heavy footed with the throttle and usually run just up on plane or just idle along.  We average abpout 8 gal/hr.  Charleston to Hilton Head about 67 gal last trip. Love it but wish we would have gotten the generator.  Just replaced the Hot water tank and Power Converter AC/DC battery Charger after 9 years, still original canvas but new is needed soon.  E-mail for specific questions.

I dont see a mention of what engine package you have. I have a single 260 and I think WOT is about 4600. Might be more than a prop issue.

As far as slow speed handling. I have a 24' with a single and I will say it's terrible out in open water with any wind or current. But I've always had singles, so it is normal for me. I boat in the Chesapeake so there is always plenty of wind and current. I wouldnt know if twins would handle better at slow speed..
