I just bought a 1988 Sea Ray Sundancer 268. My insurance application wants to know the maximum horsepower and I have no idea where to get this info. HELP PLEASE!

Typically maximum horsepower ratings refers to an outboard powered boat not an I/O.  The insurer wants to make sure you did not overpower the boat.

The largest engine I believe that is available for the 268 is a Mercruiser 454 (GM)which would put out 350-360 HP.

Maximum HP is on the data plate on the boat.  It should be near the helm.  It refers to the maximum HP that can be safely applied to the structure.  Sea Ray should have the answer if you can't locate the data plate.  The insurance company will also want to know the HP of your engine.  If it is stock, you will be well within specs.
