The Coolmatic fridge in our galley is not cooling properly. I have a thermometer in the fridge which shows the top shelf at 46 degrees and the bottom is at 50 degrees. The ambient cabin temperature is about 68 degrees and the fridge is set to its coldest setting.

Nothing really stays real cold in the fridge and forget about a cold beer. Both the Searay dealer and Coolmatic say that the fridge is operating in the normal range.

Anyone have any advice on what to do?

Well, this is not normal operating range. I keep my fridge at about 40 deg. I'm no where near the coldest setting and my cabin temp in much warmer.

I dont have any suggestions. Have you contacted the mfr of the fridge?

How old is the fridge? I know that in our older 5th wheel trailer the fridge would vapor lock some times. WE would have to take it out and shake the hell out of it.  You might try that. But how can they say it is operating in the normal range? I just looked at your message again and if it is a 2006 fridge you got real problems. Sorry I don't think I am being much help.

The fridge is less than a year old.

I called Coolmatic, the manufacturer of the unit and they say it should run between 45 and 50 degrees in normal conditions.

Searay will also not do anything about it since it is operating within manufacturer spec's.

That statement from the mfg is a joke and borders on negligence.  As a retired Navy Supply Corps Officer, I can tell you the two things a Captain fears most is an accident at sea and the crew coming down with food poisoning.  Both render the ship useless.  Freezers were to be at a max of 0*F and reefer units were to run between 33*F and 38*F.  Granted you are talking huge amounts  of food and vast amounts of money at stake, so the colder temps will keep food consumable for longer periods of time.  However, unsafe conditions are unsafe conditions. 

Google proper refrigeration temperatures and you get over 1.5M hits.  Everything from The Food Network to various universities to the USDA

It may be a low freon charge.
